Cook the pasta (fettuccine, rigatoni, penne or any other you prefer) and add the Artichoke and almond cream and sprinkle with Parmesan or Pecorino cheese and serve. It is excellent also to season risotto and as a spread for canapés or on toasted bread (Bruschetta).
Artichokes not only contain calcium, iron, potassium, phosphorus and magnesium but also inulin, a natural fiber that helps contrasting bad cholesterol and gives a sensation of satiety. Also almonds richly contain vitamin E and B2, potassium, magnesium, iron, phosphorus, calcium and fibres; they also contain oils that are part of the Omega3 and Omega 6 family, that are particularly beneficial to prevent cardio-circulatory problems.
