Dry pouch of mullet roe, salt
Cook your pasta (Penne or spaghetti), and in the meantime slightly fry some chopped garlic in olive oil. When the garlic is only slightly colored, add a glass of water taken from the saucepan where the pasta is cooking and add the Grey mullet roe. When the pasta is cooked, drain it and pour it in the pan and let it simmer slightly while mixing. Sprinkle with finely chopped celery and serve.
During the curing process, the grey mullet roe is hand massaged in order to reduce the amount of air inside, then dehydrated under sea salt for a couple of weeks.
